"Do not put off until dinner what you can eat at lunch", - so paraphrased the well-known proverb Alexander Pushkin … And indeed, the poet had a good appetite, although he had no gastronomic delights, he gladly dropped in to visit his mother Nadezhda Osipovna for a simple baked potato. One of the poet's favorite delicacies was Apple pie, which he was treated to when visiting the Wulf family, where he often visited during the years of exile in Mikhailovsky. In our review - the recipe for this dish, as well as two more apple pies that are associated with names Marina Tsvetaeva and Astrid Lindgren.
Wolves Apple Pie
If you go on an excursion to Pushkin's places in Mikhailovskoye, you can hear the story of how the poet spent his free time visiting the Wolf family in the neighboring Trigorskoye estate. There, in the preserved estate-museum, among other things, they talk about apple pie, a signature dessert that was served with tea. Pushkin was so fond of the taste of this pie that he even signed letters to the unforgettable Anna Kern only “Your Apple Pie”.
Making an apple pie at home is not difficult: the ingredients are simple, and the cooking process does not take much time and does not require special culinary skills.
Puff pastry - 500 g Medium fat sour cream - 400 g Honey - 100 g Chicken egg - 2 pcs. Apple - 5 pcs. Butter - 50 g Cinnamon to taste.
1. Roll out the puff pastry and place in a baking dish. 2. Peel the apples, cut into small wedges, caramelize in butter with honey and cinnamon. Once the apples are tender, remove from heat and allow to cool. 3. Beat the sour cream with two eggs separately, add the apples to the resulting mass. 4. Put the apple and sour cream mass on the dough, wrap the edges so that a side forms on the cake. 5. Bake the cake at a temperature of 200C for about 30-40 minutes.
Tsvetaevsky apple pie
It is not difficult to find the recipe for Tsvetaevsky apple pie; it is much more difficult to find evidence that Marina Tsvetaeva really cooked it. In the memoirs of Anastasia Tsvetaeva, there is only a passing mention of the fact that at the Dobrotvorskys' guests they were always treated to sweet pies and cakes with sour cream. A letter from Ariadna Efron, the daughter of Marina Ivanovna, has also survived, in which she tells how she spent Christmas 1959 alone: “… This year I was all alone before Christmas … I cleaned everything, tidied it up, washed the floors, baked a puff pastry with apples with my own hand custard and waited for the lights to come on to tackle the tree …"
Sour apples - 3-5 pcs. (better Antonov) Wheat flour - 2 tbsp Medium fat sour cream - 1, 5 tbsp Sugar - 1 tbsp Butter - 120 gr. + for greasing the mold Chicken egg - 1 pc Baking powder - 1 teaspoon Cinnamon, vanilla - to taste

Then add half a glass of sour cream, knead the dough thoroughly so that it practically does not stick to your hands. 2. Roll out the dough, place on the bottom of the mold. Put a layer of apple slices on top (for this, first peel the apples and cut them so that the slices are thin, use a vegetable peeler). 3. Prepare the cream by mixing the remaining glass of sour cream with the egg, sugar, and 2 tablespoons of flour. After beating, the cream should be liquid. It needs to be poured over the cake and apples. 4. Tsvetaevsky apple pie should be baked at a temperature of 200C for about 50 minutes.
