Each of the names of truffles tells about the personality of the woman herself. I found this personalization as unique and tempting as my sweets.
- Your candies have unique flavor combinations. Is this influenced by the traditions of other cultures?
I've always enjoyed experimenting with sweet and salty flavors, so I continue to do this when making chocolate as well. When I started working in one of the French restaurants in New York, I decided to bring something new to the existing desserts. People were shocked when they tried the spiced chocolate. Looking at the description of the dish, they thought I was crazy, but they soon realized that such combinations were more than successful. I like to be a pioneer in modern technology of making chocolate, I like to present people with previously unknown combinations of spices.
- What ingredient is most important to you?
I really like elderberry flowers. I use them to make delicious meals, sweets and frostings.
- Do you have any idea of the perfect meal?
In an ideal world, this would be everything around us. Local, fresh produce with natural flavors. I'm a gourmet, you can't argue with that.
- If you could invite anyone to dinner, who would it be?
My grandparents. I wish they were alive. I could share my life with them today. I learned so much from both of them through travel and family traditions, including culinary traditions, but the most important thing is that these relatives and loved ones instilled in me a large set of moral values.
-Would you like to give any advice for those who want to become a chocolatier?
Don't overcomplicate simple things, don't follow standard rules, create your own style and follow your dreams.
