For two and a half years of culinary photography for the book "Modern Cuisine: The Art and Science of Cooking" Ryan Matthew Smith took 140 thousand pictures. Of these, a little more than 2% got into the six-volume edition - about 3 thousand contrasting mouth-watering illustrations, which depict colorful food. Among the many frames, there are several photographs depicting cutaways of products. And also cauldrons and saucepans, a grill and a gas burner - also cut in two.
This is not a fake or "Photoshop" - the authors of the project really sawed the dishes to show what was going on under the lid during cooking. Meanwhile, oil splashed from the containers cut in two, trying to get into the lens or burn the gaping participants in the shooting.
And all for what? For the next edition of recipes and kitchen tricks to be remembered by the reader, vivid unusual photographs of food were needed. After all, a book was created not only about delicious, but also about beautiful food.
Before working on the cookbook, Ryan Matthew Smith did not do kitchen photo shoots at all. Yes, and cooked from time to time, and besides, as God will put it on his soul. Perhaps this turned out to be for the best, because the photographer's gaze remained sharp and fresh. The author's style was influenced by his passion for advertising posters. Rich colors, high contrast - what could be better for the person who creates tempting food photos?
A whole group of chefs and culinary stylists worked on each composition. “Many photographers torture food in such a way that it’s impossible to eat or cook it. Take it and throw it away! - says Ryan Matthew Smith. - And all so that the food looks fresher for longer and looks better in the pictures. But we didn't do that. The process of creating future masterpieces took place with varying degrees of success. Either it was possible to take tempting photographs of food with just a couple of takes, then the work stalled, so that the champion frame was late, appearing almost on the hundredth try. As a result, 140 thousand photographs taken by Ryan Matthew Smith over two and a half years of work were sifted through a sieve, and 3 thousand of the most successful shots illustrated the special kitchen magic.
